Ingredients
Brown bread 4pcs
Cottage cheese 100gms
Cheese 2
slices (cut into small squares)
Carrot 1nos
Coriander leaves a
few
Tomato (cut into thin round slices) 2nos
Walnuts ( a
handful)
Salt and pepper to taste
Method
Grate carrots using Tupperware handy grater and keep aside.
Chop capsicum, walnut and coriander leaves and set aside.
Mix cottage cheese with grated carrots, chopped capsicum,
coriander, walnuts, salt and pepper. Shape into small flattened cutlets.
Cut bread into desired shapes such as star, square and round.
On a bread slice, place cheese, tomato and cottage cheese cutlet.
Cover with second bread slice.
Insert a tooth pick and enjoy these mini sandwiches with ketchup
or green chutney.
